 In Kumamoto's Itsuki village, tofu pickled with miso has been a beloved preserved food since long ago. Pickled for another half a year, the resulting product, Yama Unidofu, has a texture very similar to sea urchin, or fois grois. This delicacy is now widely available across all of Japan, but the roots are here in Itsuki, Kumamoto.
